The Minneapolis Lyndale Farmers Market is open. I have made a trip there two times. The plant sellers are almost all gone, but the growers have not returned in full force. I’m concerned, but remain hopeful that they will return.
My staples of beets were made into pickled beets. The recipe is for one jar of refrigerator beets. They are marinating and will be ready to try soon. I ate the strawberries with Siggi’s yogurt for snacks or with Wasa brand rye crisp and cottage cheese. They were ripe and tender strawberries. During the hot weather, which used to arrive in August and is now again today on tap, a light snack is best.
I’ll continue to go to the Farmers Market and enjoy the nice weather. Minneapolis is so very green and inviting at this time of year.

Forgot to mention, I put them in a sterilized jar or kept them in a glass covered bowl with a fitted “rubber” lid. And… I add some water when the beets are not completely covered by the vinegar sugar liquid. 1/2 cup or so? 118 m. This is okay to do. I saw this done on a show.
