Who doesn’t like cookies? Okay then, skip to another post. Just kidding. Alan whipped these cookies up today from a nice blog, The Rebel Chick that gave him the recipe and the idea to “Let’s bake.”
Who doesn’t like banana bread? Cookies? Banana Cookie? With chocolate chips? Sounds great to me.
Alan changes the cup of sugar to 1/2 brown sugar and 1/2 white instead of a cup of white sugar.
Alan’s note: “They taste like browned slices of banana bread.”
For the complete recipe please click the link . It sounds very much like making banana bread, until the drop cookie goes on a cookie sheet. You won’t have to bake them for an hour like Banana Bread either!

- 3 large, very ripe bananas (I swear that the riper the banana, the sweeter the cookie will be!)
- 1 cup granulated sugar (for a richer flavor try the 1/2 brown sugar and half white sugar suggested.)
- 1 stick unsalted butter
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup of semisweet chocolate chips

I made these cookies with olive oil instead of butter! Did the 1/2 brown sugar and 1/2 white sugar like Alan did for the recipe. I only had two usable bananas. so They are delicious cake-like cookies. the banana flavor did not come through as well with only 2 bananas. but they a yummy anyway. 🙏🏻
