Fresh Summer Squash Soup Recipe = Easy

A friend, Nancy grew this pretty yellow squash in her city garden.  She still has two kids at home,  two dogs and helps her husband in the family business yet has time for a garden. It was so kind of her to share her cucumbers and the squash. I was delighted by the color – such a beautiful color yellow. (Love squash!)

Ingredients
2 pounds of Summer yellow squash
1 cup of chicken stock
3/4 cup of chopped onion (used red and it made the soup color beige – owell.)
2 tablespoons of butter
1 teaspoon of lemon zest
♣️♣️♣️
4 teaspoons of grated Parmesan cheese (Romano cheese was used)
2 tablespoons of chopped fresh tarragon

Method
Slice the squash in half lengthwise. Then slice the squash very thinly to make it easy to soften as it cooks. On medium heat put all the first five ingredients in a soup pot with a lid. Cook until all the veggies have softened. Stir occasionally. When ready, puree the soup in a blender in batches. (I used an electric stick blender. I killed the blender some months ago unwittingly. Ugh) Plate the soup and grate the cheese on top and sprinkle with tarragon. (Also, I was out of tarragon and replaced it with basil and a tiny bit of rosemary) Garnish with some alfalfa sprouts.

From start to finish, in no time, this is a very easy summer squash soup recipe to enjoy even on a warm day in summer.

I promised Nancy that I would show her a picture of what I made. She was surprised. She asked me, “Did you use one of those choppers to cut the squash?” I replied with a smile, “No. I make slow food and cut it up myself.”

A good sharp knife makes all the difference! Recipe adapted from Rachel Ray, whose approachable cooking style really appeals to me for its simplicity and flavors.

  1. What a beautiful way to use veggies from the garden this time of year. I’ve never been great at maintaining a garden but have lovely neighbors who do and share their extras with us.
