Wacky Wednesday Recipe for Squirrel or Rabbit Gumbo

It’s been a while since I found a recipe that is both intriguing and surprising! This is a traditional Creole Recipe that I saw in my friend’s Louisiana cookbook.  We were making gumbo with chicken and sausage. Later this week I’ll put that recipe out here. It’s easy to forget that people eat other creatures that are wild besides deer or duck like here in the northland. A friend who lives in the South recently told me that he had eaten “gator”. When I asked what it tasted like, he said, “Chicken.”
